How to sharpen the blade of a slicer

The sharpening of the blade of a slicer is an important maintenance operation that helps to preserve the machine in good conditions and to guarantee always a clear and perfect cut.

Never remove the blade during the sharpening.

Only use the sharpener provided by Essedue with the slicer. Only use original equipment for a proper sharpening.

When to sharpen the blade?

When you notice a decrease in cutting quality or the product waste increase you should sharpen the blade.

How to sharpen the blade?

After an accurate cleaning of the slicer, you can sharpen the blade.

Make sure that the slicer is turned off, unplug the slicer and turn the index knob on zero.

Loosen the sharpening release knob, lift the sharpener cover (without removing it) and rotate 180°. Lower the sharpener  with the blade fitting between the two stones and tighten the sharper release knob to secure the sharpener.

Connect the plug and turn the slicer on.

Press the sharpening stone (dark brown) button for 6-8 seconds, repeat the process up to 2-3 times, if necessary; then press the truing stone (light brown) button for 1-2 seconds. 

Finished the process turn the slicer off and unplug it.

Loosen the sharpener release knob, lift the sharpener cover and rotate 180°, lower the sharpener into position, the tighten the sharpener release knob.

After sharpening remove and clean the sharpener with a mild detergent, warm water and a brush.

Remove truing powder form the blade with a cloth.

NOTE WELL

Replace worn blade when the blade diameter reduce or when, turning the index knob on zero, the blade edge is not protected by the slicer table anymore. In case of replacement, please contact a Service Centre.
