How to clean a professional slicer

Cleaning the slicer is very important for the maintenance of the machine and is an operation that have to be done after every use to maintain good hygienic conditions and to guarantee the slicer a long life.

Before start cleaning be sure that the slicer is turned off and disconnected from the power supply. The table has to be completely closed with the index knob on zero.

DO NOT use abrasive or corrosive products and DO NOT put the components in the dishwasher.

For a correct cleaning you just need mild detergent and a soft cloth moistened in warm water.

Here some tips about the cleaning of our professional slicers Essedue and Rheninghaus.

Cleaning of the food chute

Let’s start with the cleaning of the food chute of the Essedue slicers. Remove it for a deep cleaning.

Pull the food chute towards you and activate the blockage device of the food chute. The index knob is now blocked. Lift the food chute and remove it.

Clean the chute with a moistened cloth and mild detergent. In the meanwhile clean also the external part of the cover of the blade and the base of the machine.

Dry with a cloth before reassemble.

In the Rheninghaus slicers the food chute is not removable. With the food chute at the beginning of the stroke, it’s possible to tilt it unscrewing the knob and clean it easily.

Cleaning of the table

To clean the table, soak a clean cloth in a mild detergent and warm water solution. With the table  completely closed (index knob in zero position), scrub and wipe the table by starting at the blade and pulling towards you. Never do the opposite! Always remember to dry.

Cleaning of the deflector

Unscrew the deflector and remove it. Clean it and also clean the part of the slicer that you exposed removing the deflector and the slice collection area. Dry with a cloth before reassemble.

Cleaning of the blade and the cover

Loosen the knob behind the slicer to remove the blade cover. Be careful and clean the cover and the blade with a mild detergent and a soft cloth moistened in warm water starting from the centre and going to external parts. Dry with a cloth.

For the daily cleaning you can clean the back side of the blade, without removing it, using a soft cloth and rotating the blade manually.

For a deep cleaning of blade and ring you can remove the blade with the extractor, essential tool to avoid injuries.

Essedue blade extractor

Remove the sharpener loosening its knob, place the extractor on the blade and tighten the knobs, not too firmly.

Loosen the blade screws and extract the blade safely. Always be careful: now you can clean the blade from the centre outward with mild detergent and a soft cloth moistened in warm water. Remember to clean the slicers behind the blade at the same time. Dry and reassemble.

Rheninghaus blade extractor (SBR)

Lift the sharpening unit up. Unscrew and remove the blade cover.

Position SBR in contact with the blade by fitting extractor shaft in the blade central hole. Screw the two knobs of the SBR in correspondence of the two holes on the blade.

Seize the SBR central handle and unscrew it by holding the aluminium central bar to keep its position.

It’s now possible to take off the blade and clean the machine. Dry and position the blade back in its seat and screw the SBR central handle tight. Unscrew the two knobs in the aluminium central bar to remove the SBR tool.

Remember: an important step to kill bacteria is to allow the parts to air dry before reassembly!
